Tips

Ingredients

  • 1.25 kg plain flour
  • 1.25 kg 00 flour
  • 50 g salt
  • 1.6 litres water
  • 10 g yeast
  • 25 ml water
  • Lil bit of sugar


PRO TIP

Instructions

  • Water should all be like warm. Bloom yeast in warm sugary water.
  • Put the rest in mixer then add yeasty fluffy bloomed happiness.
  • Let the mixer do its think for 10 mins or so.
  • Let rise to the top of the bowl before knocking back.
  • Roll into 220g balls and refrigerate
  • Boom ready to use 🙂
